Cinnamon Rolls

A low-protein recipe for kids and adults with PKU — by Dianne Sullivan

one batch “wheat starch dough
softened butter for spreading
½ cup sugar
3-4 tsp cinnamon
canned icing or home-made glaze

Prepare “wheat starch dough” recipe. After wheat starch dough has risen, roll dough into 12″ rectangle.  Spread with softened butter.  Mix sugar and cinnamon.  Sprinkle on dough.  Roll dough and seal.  With a sharp knife, cut into 12 equal slices.  Place cut side down in sprayed cake pan.  Cover; let rise in 120-30 degree oven for 30 minutes.  Preheat oven to 375 degrees.  Bake for 18-20 minutes.  Remove to rack to cool.  Ice with canned icing or home-made glaze (below).

Home-Made Glaze: combine 1 cup confectioner’s sugar, 1 Tbl melted margarine, ½ tsp vanilla and 1-2 Tbl water.
