A low-protein recipe for kids and adults with PKU —

6 Tbl oil
3 Tbl cocoa powder
1½ cups Dietary Specialties™ DP Low Protein Wheat Starch
1 cup sugar
1 tsp baking soda
1 tsp vanilla
1 cup COLD water
1 Tbl white vinegar
Mix all ingredients together with a fork or whisk. Put into sprayed 8 x 8-inch pan. Bake at 350 degrees for 35 min.
This recipe makes the BEST chocolate cake.
Hint: by adding a little more dp starch and making the batter a little thicker you can make wonderful “Whoopie Pies.” Spoon dough into circles sprayed on to sprayed cookie sheet. Bake for 12-15 minutes or until done. When cool fill with any low-Phe fluffy frosting. Wrap individually and freeze. Great for lunches and snacks.
