Best Banana Bread

A low-protein recipe for kids and adults with PKU —

1½ cups (162 gm) Ener-G® Low Protein Bread Mix
3 Tbl oil
2 tsp Ener-G® Egg Replacer
2 tsp baking powder
1 tsp baking soda
½ cup sugar
4 Tbl water
1 tsp vanilla
1 cup (225 gm) mashed ripe bananas

Preheat oven to 350 degrees.  Mix all dry ingredients together, then add the remaining and mix with an electric mixer for 2 minutes.  Pour into sprayed 9 x 5-inch loaf pan.  Let sit 15-20 minutes before baking.  Bake 40 minutes until golden brown.  Yield: 18 slices.

Hint: these can be made into muffins.  Add mini chocolate chips if you want, though don’t forget to add the extra Phe if you do!
