A low-protein recipe for kids and adults with PKU —
2½ cups (approx. 3) cucumbers, peeled
2½ cups (1 20 oz. can) stewed tomatoes
1 pkg Good Seasons® Italian Salad Dressing & Recipe Mix
1 Tbl olive oil (optional)
1 Tbl cilantro (optional)
Chop all ingredients and blend in blender until smooth. Chill and serve. Yields 5 cups.
