Peanut Butter Cookies

A low-protein recipe for kids and adults with PKU —

¼ cup (60 gm) butter-flavored shortening
¼ cup (60 gm) butter
1/8 cup (30 gm) Dietary Specialties™ Low Protein Peanut Butter Spread
¼ cup light brown sugar
1 small package instant vanilla pudding
1½ tsp baking powder
1/3 cup water
2 cups (222 gm) Dietary Specialties™ DP Low Protein Baking Mix
½ tsp salt
3 Tbl white sugar

Preheat oven to 375 degrees.  Cream together shortening, butter, peanut butter spread and sugar.  Mix in pudding. Stir in baking powder, baking mix, salt, and water.   Mix well. Drop evenly onto sprayed cookie sheets.  Bake 10 minutes.  Yield 48 cookies.
