Simple Focaccia Bread

A low-protein recipe for kids and adults with PKU — by Dianne Sullivan

2 cups Cambrooke Foods® MixQuick
¾ cup warm water
½ tsp garlic powder
½ tsp whole rosemary
¼ tsp basil
1½ tsp yeast
1 Tbl olive oil

Add everything except olive oil to a large mixing bowl.  Blend with a wooden spoon until it forms a soft dough.  Place dough on a sprayed cookie sheet and pour olive oil on top.  Spread the olive oil evenly.  Cover with towel and place in a warm place to rise until doubled.  After the dough has risen, poke holes into the top with fingers to create an authentic look.  Sprinkle with extra herbs and/or garlic salt.  Bake at 400 degrees for 20-25 minutes until crust is lightly brown.

Hint: Adding caramelized onions to the top before baking is wonderful.  Slice onions and sauté slowly in butter/olive oil until golden and soft.

Hint: Any herbs may be used.  Dill and dried minced onions are superb.
