Vegetable Soup

A low-protein recipe for kids and adults with PKU

2 Tbs butter, melted
2 Tbs chopped onion
2 Tbs chopped celery
12 oz water
2 packets GWashinton’s® Seasoning and Broth, beef flavor
1 medium potato, peeled and diced (½ cup)
1 medium carrot, peeled and sliced (¼ cup)

Lightly brown onion and celery in butter over low heat for 2-3 minutes in a large saucepan.  Add the remaining ingredients.  Increase heat to medium and cook for 10 to 15 minutes.  Yields 2 cups.
