Biscuits
A low-protein recipe for kids and adults with PKU —by Dianne Sullivan
1 cup Loprofin® Baking Mix (you may also use ¾ cup wheat starch and ¼ cup Dietary Specialties™ DP Low Protein Baking Mix)
1½ tsp baking powder
½ tsp salt
½ tsp baking soda
2 Tbl Miracle Whip® (mayonnaise)
¼ cup liquid non-dairy creamer
¼ cup + 2 Tbl water
Mix together first four ingredients in a bowl. Add in MiracleWhip and mix until the batter looks like crumbs. Add the remaining ingredients and mix with a fork. Spray muffin tins with a non-stick spray and pour batter into 4 regular or 6 small muffin tins. Spray tops of batter with non-stick cooking spray. Bake in a preheated oven at 425 degrees for 10 minutes for 6 muffins or 12-14 minutes for 4 muffins. They look like muffins, but have a biscuit texture.
