Fantastic Basic Cookie
A low-protein recipe for kids and adults with PKU —by Dianne Sullivan
½ cup (120 gm) butter-flavored shortening
1/3 cup (80 gm) butter
3 Tbl (38 gm) white sugar
1/3 cup + 1 Tbl (69 gm) dark brown sugar
1 small package instant pudding mix
½ cup (90 gm) chocolate or other baking chips
1 tsp vanilla
1/3 cup + 1 Tbl water
2 cups (222 gm) Dietary Specialties™ DP Low Protein Baking Mix
1½ tsp baking powder
½ tsp salt
Preheat oven to 375 degrees. Cream shortening, butter, and sugars together. Mix in pudding mix and vanilla. Gradually add water. Stir in baking powder, baking mix and salt. Fold in chips. Drop evenly into sprayed cookie sheets. Bake 10 minutes. Yield 48 cookies.

A time saving hint and how to add variety to the low-protein diet: Try doubling the basic cookie recipe. Divide the dough into smaller bowls. Make a different variation in each bowl. Freeze the finished cookies in small sandwich bags in small serving sizes. Now you have a variety of cookies to choose from in the freezer.
