Lo-Pro Cheesecake

A low-protein recipe for kids and adults with PKU

Crust:
8 graham crackers (full sheets), crushed
¼ cup sugar
¼ cup margarine, melted

Filling:
1 cup water
1 cup Rich’s Coffee Rich
16 oz. marshmallows
3 cups Kraft® Cool Whip
1 tsp almond flavoring

Mix crust ingredients and pat into 9 x 13-inch pan.  Bake at 400 degrees for 10 minutes.  Heat marshmallows, water, and Coffee Rich until  marshmallows are melted and smooth.  Let stand at room temperature until mix is completely cooled (at least one hour, no more than 6 hours).  Stir almond flavoring and Cool Whip into cooled marshmallows.  Spoon mix onto crust and refrigerate or freeze until ready to serve.  For easier cutting, cut while frozen.  Top with fruit if desired.
