Scones
A low-protein recipe for kids and adults with PKU — by Dianne Sullivan
2 cups Cambrooke Foods® MixQuick
¼ cup salted butter
2 Tbl sugar
½ cup cold non-dairy creamer
Add baking mix and sugar to large bowl. Using a pastry blender, cut butter into the mix until lumps resemble coarse meal (this may also be done with your fingers). Add the creamer and stir until well moistened. If you would like, add ½ cup currants or raisins to dough. Form dough into a 6 to 8-inch circle, which slightly domes in the center. Cut into 6 or 8 wedges. Place wedges onto Pam® sprayed cookie sheet and bake at 400 degrees 10-15 minutes or until golden. For more brown scones, spray dough lightly with Pam before baking. Serve warm with butter, jam, or honey.
