Fantastic Basic Cookie Variations
Low-protein cookie recipes for kids and adults with PKU —by Dianne Sullivan
Prepare the “Fantastic Basic Cookie” recipe, but swap in the following ingredients to make these different types of cookies —
Chocolate Chip Cookies: Use vanilla pudding and mini chocolate chips (6 mg Phe per cookie)
White Chocolate Chip Cookies: Use chocolate pudding and vanilla baking chips (5 mg Phe per cookie)
Spice Cookies: Use vanilla pudding and add 1 Tbl molasses, 1 tsp cinnamon, ½ tsp cloves, 1 tsp ginger, and 6 Tbl (54 gm) raisins (5 mg Phe per cookie)
Sugar Cookies: Use vanilla pudding and sprinkle with colored sugar. These are wonderful frosted (3 mg Phe per cookie)
Coconut Cookies: Use coconut flavored instant pudding. Drop cookies on sprayed cookie sheet. Add a small “pinch” of coconut to each, and bake. When cool, drizzle with a little melted chocolate (5 mg Phe per cookie)
